We have two ferrets and three cats.  The cats *can* jump; the ferrets
cannot.  Maybe the cat makes a lot of noise, but she could jump and get
away if she wanted.
 
The ferrets do seem to have an intense fascination with cat ears -- mine
love sniffing and licking them.  They also jump on the cat's shoulders if
they're out playing in the yard, nip at its neck.
 
I don't think there's anything wrong with letting them play together.
Your baby weasel will outgrow his nippiness and he and the cat will be
good friends.  I'm convinced ours don't know who's a ferret and who's a
cat.  They're awesome together.
