I have had ferrets sleeping with me in bed or at the least cohabitating in
my bedroom with me for the past eight or so years.  In that time I have
also always slept on a waterbed.  I have never had a ferret be the least
bit interested in the bed as a chew/play toy.  This includes ferrets from
eight weeks to eight years.  We do have a heavy "protector/mattress pad"
on it, which runs over the corners under the sheets, perhaps this is what
keeps it from being an attractive nuisance.  :-)
 
On another note, I was straightening out my walk-in closet yesterday.  I
took a flashlight to look in the corners under the shoe rack and found...
you guessed it... a corner which "Someone" has been using as their personal
potty for some time now.  I was not pleased, and have narrowed it down to
two suspects.  Ah well, I guess I'll have to be more careful about letting
them play in there from now on.
