You can now get a biopsy of the intestine via endoscopy, where a
long tube is inserted into the intestine through the mouth, down the
esophagus, etc.  Not all practices have this equipment, and the small
samples are even more difficult to read - but it doesn't involve surgery.
 
Also, the bloodwork taken in May is not current enough to make any
diagnoses with.  I would suggest starting with a new blood profile.
