Most insects shouldn't be a problem.  There's always some risk when they
eat anything live, but you shouldn't have much trouble.  As gross as it
is to us, some animals seem to love cruncy, chewy cockroaches.  If your
kids *do* eat wild insects, though, you may want to periodically have
your vet check their stools for parasites.
 
If what you saw was a true centipede, though (long legs sticking out to
the side), I would be worried about that.  They are poisonous.  I honestly
don't know whether they have to bite to spread their poisons, or whether
or not they are dangerous when eaten.  That's not a chance I would like
to take, though.
 
Also be wary if you use pesticides.  The insects may have picked up some
or ingested some that hasn't killed them yet.  Then your ferrets eat the
insects and THEY end up ingesting the pesticides.... That's not something
you want to have happen.
