Just like to say "Cobblers !" to all you've been told.....you sound like
an A.1. animal person with tons of experience and you're obviously not
doing this on a whim...go for it!
 
I have 3 young kids (7, 4 and 20 months) and they all adore the ferrets.
Obviously I don't leave them alone together, but we play under supervision
and we take them out for walks in the woods with the dogs.They all get on
fine.Yes, there isd a slight musky smell, but if you keep their cage clean
it's not too bad (I like it!) and I understand that you lot over there get
your ferrets descented anyway.You will probably need to neuter them as the
males get a bit more odiferous as they enter rut, as well as a tad more
"macho".
 
A ferret will only bite if frightened or if it has not been socialised,you
should be used to this concept with your experience of animals.I'm sure
you'll have tons of responses telling you this....
 
Good luck if you decide to indulge yourselves.But I should warn you, you'll
get hooked!
