Hi all, Thanks for the tons of responses. In the main, people suggested a liquid high protein diet such as from Carnivore Care. Our vet uses Hills A/D which is from animal liver, so it's mostly protein/fat, no added sugar. I had to use a small amount of ensure to emulsify it, but otherwise mixing it with water works very well. Anyway! Amazingly enough Luci is still with us and on the mend. She was fairly stable yesterday AM when we got her, and has since become very mobile and will eat solids. She is still very swollen and inflammed. I feed her every two hours on the liquid diet. Today I will try every 4 hours with the goal of weaning her off a liquid diet. We'll see. No insulinoma attacks in a day and a half, which is a huge improvement in my book. I'm glad we had the emergency care available to get her through the worst of it, but bringing her home was a very good decision since we can monitor her 24/7, and she isn't as stressed.
