I am not a shelter operator, but I used to be. :-)
 
Here in northeast Ohio, we had a pretty high number of ferrets coming
into the shelter that were not altered or descented.  I did not have
ferrets descented.  It was mainly a cost issue--the descenting cost more
than the neuter/spay!
 
I would hand a scented and descented ferret to potential adopters, and
challenge them to tell which was which, and describe a "poof" as rather
like a human's passing gas that dissapated in 5-10 minutes.
 
I didn't see any reluctance to adopt a scented ferret--personality and
looks were much more important, and never had a complaint from someone
who adopted one.
 
So I vote with you!
