Not a good topic for the squeamish...
 
Fitch can be used interchangeably with ferret but it is normally used to
denote either the pelt of a ferret or a ferret bred for its pelt.  It is
not normally used to describe hunting animals in particular.
 
Fitch fur is a low grade fur and is used as a poor man's mink.  It is not
a desired fur.  Mink ranchers normally keep some ferrets around as a cheap
animal that acts as a "canary in a coalmine" to get sick before their more
valuable mink.
