I have no scientific evidence on this question, but I have had more than a
few ferrets with definite color preferences.  I have one at the moment --
and he's not the first to exhibit this behavior -- who preferentially
sleeps on or in things at the red end of the color spectrum; he will choose
red, organge, or pink bedding over an identical item of another color every
time.  In the past I've had a few who showed a similar preference for blue
or green bedding, and my first ferret flatly refused to sleep on anything
that wasn't blue.
 
So I think it's safe to assume that ferrets can distinguish at least some
colors, but (like the rest of us) they may have different favorite colors.
Before you select a color scheme for your ferrets' room, you might want
to ask them what they prefer.
