I don't know about the pig's ears, but there are special chews for
ferrets.  NPIC makes N-Bones Ferret Chew Treats in chicken or seafood
flavor.  They are long, thin edible but hard sticks.  It says "All
natural, totally edible" min crude protein listed as 35-40%.  Many places
have them for sale, or you can check out their website at www.n-bone.com
 
I'm sure a kit would especially welcome the chew treat, althought they
also nip for play.  They can be taught not to, but the chew alone may not
help with the desire to play bite.
