It depends on the ferret.  Some are interested in cords, some aren't,
but most will ignore them after a little training.  You'll have to watch
your little guy to see if he's interested in them.
 
You can tack/staple/tape the bundled cords to the back edge of your
desk to keep most of them out of the way.  This is really nice if you
permanently attach one end of a Velcro cable tie to the desk.  Then you
can wrap the free end around the cables to keep them bundled and out of
the way.  You're still going to have trouble where the cords plug into
the wall, though.
 
I find that my kids are more interested in cables (especially phone
cables) when they're bundled up in the middle to keep them short.  They
don't seem to bother the loose cords.
 
If you really have a problem with cord chewers, try putting Bitter Apple
on the cords.  I like using the Bitter Apple Furniture Cream for this as
it seems to last much longer than the spray.
