They sure do.  I can recall one time when Felix the late albino cuddleweasel
was fast asleep on my chest, laying on his side.  I looked down and his
front paws were twitching in a typical "walking" pattern...he stopped after
a few seconds, and made "lapping up water" motions with his tounge(sp?) and
mouth.  After his imaginary drink, he resumed "walking", and then curled
much tighter into a ball, like he was dreaming about settling in for a nap!
 
I've seen both rats and dogs suddenly awaken from nightmares.  My newest
baby fert, little Hairy Crumb *may* have jumped awake not long after he came
home - so no, you're not going insane.
