Amazing!  I'm a vegetarian, but I feed my ferrets meat-based foods.
 
However, if your ferret won't eat any meat or meat flavoured things, I guess
it's time for plan B. There is a book that explains how to feed a dog or cat
a vegetarian diet, and I think you might want to read that.  It goes into
detail regarding the nutritional needs of dogs and cats, and then provides
some recipes for making vegetarian meals for them. There is a
very-high-in-protein supplement that one adds to these recipes to make sure
the little beasties get what they need, including taurine.
 
I'm sorry that I've forgotten both the name of the book and the supplement,
(it's been years) but a bit of snooping around should turn that up. I didn't
ever feed my cats JUST vegetarian food, but I did try a number of those
recipes and the puddies *loved* them! Lentils and nutritional yeast and the
magical supplement combined to make somthing that was about 20 times better
than any other treat, as far as they were concerned.
 
Probably your best source of information on this topic is rec.food.veg.
