You may as well just stick a lump of meat on a piece of string and wave
it around as the mice you will be using will have a much instinct to hide
or get away from your ferrets as the lump of meat would.
 
Now this would be different if you used your ferret to hunt wild vermin,
such as rats or mice and I dare say that your nebiours would thank you
for doing it.

If you wish to feed a more natural food why not start by feeding raw
mince.  My butcher will mince whole chickens for me so the ferrets get
both flesh and bone, I also get green tripe from the slaughter house as
well as the lungs, spleen, liver and heart of sheep all of this I mince
at home and feed to my cats, dogs and ferret.  Now what can be more
natural than that and doing it this way plus no defenceless tame mice
are made to suffer.
