Well
 
I can't claim to be an expert, but I think your little ferret gets so
scared/excited that he looses sphincter control.  I don't think he poops in
fight consciously at all.  I think it is an unconscious weakening of his
anal sphincter during a time of great stress.  Especially because he was
young, he may not have had great sphincter control yet, just as a human baby
does not.
 
I'm sure you've heard the phrase, "You scared the sh** out of me." It can
literally happen.  To anyone, not just baby ferrets.
 
But ya gotta love him anyway.:)  My little bruiser is always the first to
attack.  But he fights clean (mostly).
