This is based on lots of experience treating ulcers, and conversations
with expert vets.
 
Carafate timing and dosage:
Give the Carafate 10-15 minutes before EACH feeding.  The 1 gm / 10 ml
generic concentration is fine.  For a 1 lb ferret, 0.5 ml should be
plenty.  Carafate works by physical rather than chemical action, and
overdosing is difficult.  Generic Carafate (sucralfate) has no flavoring,
just a chalky consistency, and most ferrets tolerate taking it better
than some fruit-flavored preparations.  It keeps a fairly long time and
does not need refrigeration.  (This may not be true for some compounded
versions.)  There is also a chicken flavored veterinary preparation that
some ferrets might like better.
 
Duck Soup recipe:
I don't know about the issues of heating Ensure.  I would guess that
gentle warming at a low setting would be ok, just avoid overheating.
 
My recommendation though is just to feed chicken baby food.  The blander
the diet the better.  You can add a little of your other mix as she
improves.  (And you can always use that as a treat for your other
fuzzies!)
