Fitch as fur is either from polecats or fur farm ferrets.  Sorry.
 
At one point fitch refered to the sable colored ferrets as opposed to the
white (albino) ferrets called "English".  The sables were (and still are)
called polecat-ferrets or just polecat in some parts of Europe.
