I don't think that there is much more to say.  You said it all.  Handling and
training seem to make a bigger difference in behavior and attitude toward
humans than color of coat.  Some believe that the Red-Eyed White is the
original color of the domestic ferret and that cross breeding with the
European Polecat generated the sables.  IF that were the case, one might
think that "Albino's" would be the best temperment.
 
We have 18 of our own.  One of the sweetest is a female albino, who came to
us as a viscious- bite your arm off-terror as the result of extremely abusive
treatment (owners were arrested for animal cruelity).  She was terrified of
people.  Now she gives kisses and loves to cuddle.  A matter of treatment and
training - not color.  In the 300 or so we've handled here in the shelter,
I've yet to meet a truely mean or vicious ferret of any color.
