I used to work with a ferret, Sonny, who was a serious biter, and the
thing I learned most from him was that you can't allow yourself to
be intimidated, or they think the biting is part of the game.  If
the nipping really worries you, buy a pair of cowhide work gloves,
and you'll be quite well protected.  Right now she learns that she
can avoid punishment by threatening to bite, and that isn't good.
Especially with all the threats from uninformed/corrupt health
departments.
 
Put on the gloves if you must, and if she bites, pick her up, shake
her around a bit (they hate that) and whap her on the nose.  Repeat
if she bites to get even for the punishment.  Making sure your
darling won't bite someone is very important.
