Chicken allergy?

We have a foster ferret who has had soft to liquid, stinky, poops for
several months. The foster dad has removed corn from his diet, courses
of antibiotics make no difference, poop appears to be "bug" free. We
are wondering if he could be allergic to chicken. We are working on
giving him a homemade diet that is beef based but I'm wondering if
anyone has come across a chicken-free food that would be suitable
for ferrets. The freeze dried venison/duck/bison foods for dogs are
difficult to process. Thoughts?
