Boy vs girl ferrets - look for a "belly button" in the middle of the
belly. That is the boy's penis sheath.

A girl won't have it. She will have a vulva visible under the
"pooper"... ;)

Both have nipples.

You will be able to tell at any age even if they are fixed/unfixed
using the belly button example.

And if they are not pure white, they are not true albinos, no. But
"close enough" in my book if you have red eyes and are mostly white
(or yellow LOL!).
