When fur was used to make coats from ferret pelts, no Lady would wear
a ferret fur coat so the name fitch was used, so the ladies of the
time were told that that fitch was second grade mink. "Fitch is a dark
brown mustelid of woodlands of Eurasia and Europe that gives off an
unpleasant odour when threatened"
In the same way that the rabbit was called conney because no lady would
wear a rabbit skin coat. "Any of various burrowing animals of the
family Leporidae having long ears and short tails; some domesticated
and raised for pets or food"
