I forgot to reply to the cow's milk issue...
 
I don't remember for sure, but I think I remember something to the
effect that it is the butter fat that's the problem.  I wouldn't
swear by that, I'm just mentioning it in case someone is looking in
to the reason they can follow that as a lead.
