Yes, coccidioidomycosis has been reported in ferrets, but it is
considered a rare disease for ferrets. Your current treatment with a
long term antifungal (itraconazole) is a good option. Keeping the jaw
cleaned and topically treated with a surgical scrub would be the other
thing to add.
Perhaps you can mix the itraconazole in with some ferretone or in with
the baby food to hide that taste or have a compounding pharmacy make a
flavored version. Four months of stressing her out with twice a day
medication may cause a return of the stomach ulcer, so lets hope
ferretone or baby food or flavoring will work.
