I have been making a chicken gravy for a while and had pretty good
success with it.  I puree a whole chicken raw; everything.  Boil it up
with a few other ingredients, then puree it again.  Finally, before I bag
it for freezing, I strain out any bigger particles still left.  What I
have left has the consistency of pudding.  So in this case, I think the
bones are rendered harmless.
