I'm not trying to one up anyone but it's really important to understand
coatings whether epoxy, DTM or conventional.  There are two part epoxies
that are less harmful than single component epoxies.  The real important
feature isn't so much the resistance to urine, alkali, etc but if it is
USDA approved for incidental food contact.  If it is a true varnish it
is probably softer than a epoxy (regardless if the label claims to be
epoxy).
