"April,
My personal qualifier for sable vs.  chocolate is "cool" vs. "warm".
Sables are usually a cool, almost black or very deep brown outer coat
(think black coffee) with a "cool" white or offwhite under coat.
Chocolates are a warmer, more "Hershey's" brown with a "warm" offwhite
or cream under coat.
 
Gotta remember, too, the photos on the website are mostly "amateur", with
relatively poor lighting that doesn't always display the colors properly.
